做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
