做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
