做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
