做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
