做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
