做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱(cōng )切(qiē )成(chéng )段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
