做法:春笋切成(chéng )片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
