做法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
