做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
