做法:春(chūn )笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
