做法(fǎ ):春笋切成(chéng )片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
