做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水(shuǐ )快熬干(gàn )的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
