做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上(shàng )锅(guō )盖焖。
