做法:春笋切成片(piàn )后加少(shǎo )许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段(duàn )。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时(shí )候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
