做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清(qīng )水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
