做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油(yóu )翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
