做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
