做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
