做法:春笋切(qiē )成(chéng )片后加(jiā )少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
