做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
