做法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
