做法:春笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖(gài )上锅(guō )盖焖。
