做法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
