做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
