做(zuò )法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
