做(zuò )法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖上锅盖焖(mèn )。
