做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时盖(gài )上锅(guō )盖焖(mèn )。
