做(zuò )法:春(chūn )笋(sǔn )切成片后(hòu )加少许盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
