做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
