做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
