做(zuò )法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均(jun1 )匀稍收汁(zhī )时盖上锅盖焖。
