做法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐(yán ),翻炒均匀稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
