做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
