做法:春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出(chū )后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干(gàn )的(de )时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
