做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖(gài )焖(mèn )。
