做法:春笋切(qiē )成片后加少许(xǔ )盐捞(lāo )出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
