做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
