做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右(yòu )。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
