做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
