做法:春笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
