做法:春笋切成片后加少(shǎo )许盐(yán )捞出(chū )后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
