做法:春笋(sǔn )切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加(jiā )入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
