做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅(guō )盖焖。
