做法(fǎ ):春笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
