做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
