做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
