做法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
