做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
