做法(fǎ ):春笋切成片(piàn )后(hòu )加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
