做法:春笋(sǔn )切成(chéng )片后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
